100g shredded cooked chicken
2 tomatoes, diced
Pinch of paprika
Pinch salt and pepper
1 packet of flaky puff pastry
1 table Spoon of water
Preheat oven to bake at 180°C. Add chicken, diced tomatoes, paprika, salt & pepper to a big bowl and mix thoroughly. Lay out pastry sheets and evenly cut each sheet into four. Spoon a small amount of the chicken mixture into the centre of each pastry square and fold in half, pinching the edges of the pastry together to close the parcel.
Lay the pastry parcels out on a large baking tray with at least 1cm between each parcel. In a bowl, beat one egg with 1 table spoon of water until the mixture is smooth. Using a small pastry brush or clean fingers, brush a light layer of the egg mixture over each parcel. Sprinkle with salt and pepper and put in the preheated oven for 20-22minutes or until golden.
Serve by themselves or with baby peas for a healthy dinner.
