Corn and Pea Fritters

Makes 12 fritters, serves 6

Ingrendients:

1 Can of corn – whole kernels 410g
½ cup of frozen peas
1 carrot – grated  optional
½ cup of Self Raising Flour
½ cup of Cheese – Tasty, Colby, or Edam
½ cup of milk
1 egg – lightly beaten
1 tablespoon of Cooking Oil
large pinch of Salt and Pepper

Method:

Place frozen peas in a bowl of warm/hot water for 5 minutes to thaw. Once warm, drain and set aside. Drain liquid from the can of corn. In a medium mixing bowl place corn, peas, carrots (optional), flour, cheese, milk, egg, salt and pepper. Mix well until the flour and milk are completely combined.


Heat a medium frying pan on medium, add cooking oil. Using a ¼ cup to measure, cook corn mixture for 3-5 minutes on each side, or until the fritters are golden and cooked through. Serve with sour cream and sweet chilli sauce (optional). Fritters can be frozen, and are great cold the next day as well.
