Easy potato curry

Try this simple recipe for a comforting autumn curry

2 medium potatoes, cubed

1 onion, chopped

1 green pepper, chopped

2 garlic cloves, chopped

2 medium tomato, chopped

3 tsp curry powder

½ tsp chilli powder

Salt and pepper

400g of long grain rice


Cook the rice according to packet instructions. This will take about 20 minutes.

Fry the onions until they begin to brown. Add the garlic and the curry powder, fry until you begin to smell the spices.

Add the chopped tomato and fry until soft. Add the potatoes and fry for two to three minutes, then add a cup of water. Cook for 15 minutes until potatoes are soft. Add the green pepper and cook for another three to five minutes.

Add salt and pepper to taste, and serve with rice.
