Summer is here and it’s time for a BBQ! These mussel fritters are easy to make and delicious to eat with friends
Cost per person: $1
¼ cup milk
½ cup flour
½ tsp baking powder
12 smoked mussels, chopped
salt and pepper to taste
Whisk the egg in a bowl then add milk, flour and baking powder and whisk to form a smooth batter. Add chopped mussels and season. Using a large spoon, place the mixture in eight even rounds on the flat griddle section of your BBQ. Fry for two minutes, then flip with a fish slice and fry for another two minutes.
Serve with mayo or sweet chilli and a slice of bread and butter.
